Grilled corn, peppers, and onions combine with juicy chicken, creamy avocado, and tangy feta, all tossed in a zesty chipotle-lime Greek yogurt sauce. Instructions:
- Cook the chicken to your preference.
- On the BBQ, grill corn, red pepper, red onion and jalapeño.
- Once blackened, remove from heat and dice all vegetables.
- Combine vegetables and chicken, then mix.
- For the sauce, add all ingredients and whisk until incorporated.
- Pour the sauce over salad and stir well.
- Top with feta cheese, more cilantro and green onion.
